Restless - 7.5% Farmhouse Sour Ale with Pecans & Local Maple Syrup Aged in 2nd use Bourbon Barrels. 375 ml.
Brewed in early March of 2018 this year with a toasty English Maris Otter base malt along with some smaller additions of flaked rye & barley for texture, and even the tiniest portion of Beech Smoked barley for additional complexity. In the boil, we added EKG hops and a large dose of local maple syrup. Then fermenting with one of our mixed cultures and resting in second use bourbon barrels for six months with pecans.
While the bourbon has subsided in these barrels, there is still a level of woody vanilla oak that is perfect for this beer. Pouring a beautiful amber from the maple syrup addition. There's a bright citrus sourness as well as notes of caramel, toasted pecans, and clementines. While you may expect sweetness, you’ll be surprised to find it as dry as can be with some crispy brett funk after each sip.
