Batch three. An ongoing collaborative table saison with some adjustments along the way. For this one we kept the grain base the same, introduced some new yeast, then aged it in a borrowed cider barrel from Revel, and finally blended in some of their delicious perry. The result is an incredibly quenching, dry and flavourful farmhouse ale. A touch of acidity and some dusty brett funk from spending six months in the barrel. The pear is fresh and bright, while adding a delightful texture. Floral and spicy from the Hallertau Blanc & Saaz dry-hop, backed with a light malt base.
