BEES! Oak Aged Bière de Miel • Farmhouse Sour Ale Brewed with Local Honey • 8.0% abv.
Brewed with Pilsner malt, a bit of both flaked & malted wheat, and some biscuity Maris Otter. The wort was boiled with East Kent Golding & Strisselspalt hops before being chilled, while a large dose of honey was added before sending off to barrels for an oak fermentation and aging. Fermented with a blend of saison yeast, brettanomyces and a mixed culture previously inoculated in the barrels. Prior to packaging we lightly dry-hopped the beer with Citra & Denali for a little added citrus kick. The combination of honey and wheat give this beer a full body and silky texture. The sourness brightens the flavours, while the brett gives off a hint of rustic notes. Flavours of pineapple, hay, grass, apple skins and subtle oak tannins and honey.
