PERSISTENCE OF MEMORY • 9.0% Pineau des Charentes Puncheon Aged Farmhouse Sour Ale with Cabernet Franc & Shiraz Wine Must & Skins. Our first pull from our first puncheon, we racked 50% of the 600L oak barrel for packaging, then immediately topped it off with more oak-aged sour beer as well as additional wine must to continue refermentation. This will become a solera method sour where the large oak barrel is never fully emptied. Persistence of Memory has notes of figs, clove, pepper, and currants from being aged in the puncheon previously holding the wine/cognac blend. The wine must adds a depth of red wine flavours, aromatics, and tannins. Dry, refined, and a delicious treat for the holidays ahead.

ATMOSPHERE • 5.5% Oak Aged Farmhouse Smoked Sour Ale. Inspired by the Lichtenhainer style, but with our own take on the smokey/sour style. Brewed with German pilsner malt, malted & flaked oats, and beech smoked barley malt. Hopped with a blend of Opal, Saaz, Saphir & Styrian Goldings. A balanced smoke character with refreshing acidity. Light fruitiness with notes of caramel, honey, and grassy hops.

Our bière de coupage, a blended farmhouse ale. Each year the blend is a little different, but the idea always the same. We blend together a fresh, hoppy farmhouse ale with a sour ale that’s been aging in oak.
This year’s blend is a base of oak fermented farmhouse ale dry-hopped with Mandarina Bavaria & Hallertau Blanc blended with a 15-month red wine barrel-aged farmhouse sour ale brewed with aged hops!
Pours a rustic orange with citrus and gueuze-y funk aromatics. The body is soft from the fluffy carb, and wheat additions from both beers. While fresh, this beer is tasting hop forward with candied fruit notes as well as grapefruit and apple, along with an earthy background from the aged hops. Aging will increase funk with time.
